Abstract

Today, natural pigments including anthocyanins, chlorophylls, carotenoids, and betalains have received more attention because of their health-promoting properties and good interaction and compatibility with macromolecules such as polysaccharides, proteins and lipids, in the food and biological systems compared to synthetics dyes. However, extraction of pigments from natural sources using conventional methods has drawbacks including weak performance, less efficiency, extra solvent utilization, prolonged processing period, as well as thermal decomposition of pigments. In contrast, using non-thermal and modern extraction methods including pulsed electric field (PEF) technology helps to efficiently extract and preserve natural pigments. Therefore, this review study summarizes the principles and functions of PEF systems and the extraction of pigments from natural sources using PEF technology. © 2024 Elsevier Ltd
